Weekly Meal Plan: Plant-Based Meals with Healthy Leafy Greens!

If you’re looking to get some more healthy leafy greens into your daily meals, this meal plan is for you! Greens refer to green leafy vegetables and there are so many different kinds to enjoy! From kale to arugula to spinach, to lettuce, the options seem endless. There are so many health benefits to eating more greens, but sometimes it can be so hard to incorporate them into your diet. Sometimes, you don’t feel like eating a big salad and that’s okay! There are other ways to eat and enjoy greens.  For ways to sneak in some greens into your snacks and desserts, you can use spirulina powder or any greens powder that you have on hand. This week, we’re bringing you ways to eat and enjoy healthy leafy greens for your breakfast, lunch, dinner, and dessert  that are fully vegan and plant-based!

Breakfast:

There are lots of ways to enjoy greens for breakfast! You can add some spinach into your smoothie (you won’t taste it) or into your tofu scramble, as well! Plus, feel free to add some greens into to chickpea omlettes, too! If you don’t like spinach or want to add a different green to these dishes, you can easily use kale! There are many ways to eat and enjoy healthy leafy greens!

Lunch:

If you’re looking for ways to enjoy healthy leafy greens at lunchtime, the easiest way to do that is with salad! You can take your salad to the next level and add avocado, hemp seeds, and roasted veggies to make it even more delicious. Also, you can also cook up some delicious spinach balls and dip them in hummus or mayo, too. Don’t worry, if you’re not feeling like doing either of those options, you can also do lettuce wraps or collard wraps and fill them with your favorite mix of vegetables and grains!

Dinner:

Dinner is a great meal to incorporate healthy leafy greens into! You can make a delicious pie with a savory spinach filling (or even have quiche for dinner!) or make a buddha bowl and fill it with grains, greens, and seeds! If you’re looking for something different, you can try out these incredible bao buns filled wth spiced chickpeas!

Dessert:

The easiest way to sneak greens into your dessert is with greens powder or spirulina powder. If you don’t have that on hand, you can omit it and just enjoy your dessert. You can also choose recipes with hidden vegetables in it, as well. That way you can have more vegetables rather than specifically healthy leafy greens.

The best way to eat greens for a snack is to enjoy them either on their own with a high protein dip such as hummus. Sneak in those greens with greens powder or spirulina.
