This Creole Okra Corn Soup by Kathy Hester is out of this world! You have an option to cook this soup on the stove for a fairly quick and easy dinner. Or you can just throw everything in the slow cooker and let it cook all day while you are out at work. Make it Easy Tip: If you aren’t feeling well just leave the onions out so you don’t have to stand in front of the stove at all – just throw the rest in the slow cooker and go back to bed. You can even cook it on high for 4 hours if you make it when you wander to the fridge to get some water in the afternoon before you go back to bed!

This Red Lentil Corn Chowder by Kristen Genton is such a creamy dish with plenty of protein and flavor. This soup because it’s so incredibly filling and also crazy easy to make. Only about 30 minutes from start to finish and dinner is served!

I wanted to make my favorite Thai soup because I have been craving it. If you want, you can decrease the coconut milk to one can – which will decrease the fat – and just add more vegetable stock. If you want more vegetables in this soup, add some sliced mushrooms and/or carrots. To add more protein and fiber, a can of beans wouldn’t hurt or some jasmine rice or quinoa – definitely toasted. Get creative, add what you like, the base is so tasty anything would work. I served this Thai Corn Soup by Jennifer Strohmeyer warm, but it would also be delicious chilled.

As the season is beginning it’s transition and the evening air is filled with a bit of chill, I’ve been craving soup. So I decided to use what will likely be the last round of sweet summer peppers from my CSA in a nice pot of soup! Corn is another favorite summer staple of mine and a bag of leftover roasted corn and a fresh assortment of sweet peppers got me thinking…Roasted Corn and Pepper Soup? I’ve been obsessed with smoked paprika lately and I thought the addition of this smoky spice would pair nicely with the smokiness of the roasted corn, and did it ever. This Smoky Roasted Corn and Sweet Pepper Soup by Melissa Bechter was warm and rustic, and made for a wonderful end of summer meal!
