The best part of the end of summer means there are abundant produce options. In-season fruits and vegetables can be enjoyed in a variety of ways, but if you’ve got a lot on hand, making a salad is a great way to eat a lot of them at a time. Here are a few salads that you can make! Feel free to get creative with these salads and add your favorite plant-based protein to make it a more complete meal!

It’s corn!! Corn is perfect for end-of-summer and you can simply boil it on the cob and eat it with butter and salt. You can also grill corn for a smokier flavor, or add made it into a deliciously inspired corn salad.
