If you’ve got extra summer produce, this guide is for you! This week, we’re celebrating the produce that’s in season as summer starts to come to a close. No worries, there are still weeks left, but these delicious fruits and vegetables are best at this time. These foods include watermelon, corn, raspberries, tomatoes, and peaches!

The best part of the end of summer means there are abundant produce options. In-season fruits and vegetables can be enjoyed in a variety of ways, but if you’ve got a lot on hand, making a salad is a great way to eat a lot of them at a time. Here are a few salads that you can make! Feel free to get creative with these salads and add your favorite plant-based protein to make it a more complete meal!

Corn:

It’s corn!! Corn is perfect for end-of-summer and you can simply boil it on the cob and eat it with butter and salt. You can also grill corn for a smokier flavor, or add made it into a deliciously inspired corn salad. There are a variety of ways to enjoy tomatoes at the end of summer. You can roast them up and add them to sandwiches, you can slice them and eat them with a bit of salt, too. These recipes are more ways to get use out of your tomatoes, too.
