Not only does it keep you on track with your fitness goals, but it saves a lot of time. Imagine coming home after a long day of work, your meal already planned and ready to assemble in mere minutes. Does it sound too good to be true? Don’t worry, that’s why we’re here to send you Weekly Meal Prep inspo every week to get you in the kitchen!
We’ll give you a set of ingredients to work with every week and include seasonal recommendations, when possible. The primary goal with our weekly meal prep guide below is to help you focus your meals predominately around a new set of ingredients or theme every week. We’ll give you a plethora of creative ways to prep these ingredients to create healthy, quick, easy and tasty recipes, so you’ll never be bored.
This week, we’re prepping meals with spring vegetables like fennel, radish, spinach and arugula!

Fennel is full of awesome nutrients that make it a great piece of produce to incorporate into your diet – but more importantly, it’s a delicious addition to many different recipes! Wash and store your fennel at the beginning of the week so you can quickly whip up any of these awesome meals! It’s delicious in a Creamy Baked Penne With Kale and Fennel from Nancy Partington that you can make in a big batch for a comforting dinner and leftovers for lunch this week. In order to enjoy all the health benefits of fennel, check out Olivia Budgen‘s Liver-Protecting Fennel Juice, which you can prep the ingredients for in advance and just blend in the morning! For a simple and flavorful dish, whip up this Fennel Herb Salad With Italian Style Salsa Verde from Stephanie McKinnie – you can have the salad on its own with pre-prepped ingredients, or alongside a slice of this Chia and Fennel Green Pizza With Kale Pesto and Hummus from Harriet Porterfield that will make the perfect lunch.

Radishes are amazingly versatile, since they can be enjoyed raw and crunchy or cooked to bring out even more flavor! Either way, they’re tasty.
