The best way to use up the last of the summer fruits is to make crumble bars! There are so many ways to make them and create them, and the best part is they’re super versatile. This means you can mix up the variety of flavors depending on what you have on hand! If you’ve got peaches, berries, nectarines, or even raspberries, you can make some crumble bars!

Crumble bars use oats and flour as a crust and have a fruit-based center. These make a wonderful dessert, but you can even eat them as a snack! They’re different from a pie because they have a crumble top, usually made of sugar, oats, and vegan butter on top rather than a crust all the way around. Think of crumble bars like pie filling with a crunchy top. This wonderful dessert is easy to recreate vegan or plant-based since you can just switch out the butter you use for vegan butter. For everything else, these ingredients are usually ones found in a typical pantry and you can use frozen berries or fruit for these, making these bars wonderful to whip up all year round.

Feel free to top it with non-dairy ice cream, whipped cream, or even a homemade fruit compote.
