Ingredients You Need for 4-Layer Blackberry Jam and Chocolate Crumble Bars [Vegan, Gluten-Free]

For the Base:

  • 2 cups sweet potatoes, measured after steaming
  • 1 cup dates, soaked (keep the water)
  • A pinch of salt
  • Cinnamon, to taste
  • 2 teaspoons vanilla extract
  • 2 teaspoons coffee powder
  • Toffee or caramel flavoring (optional)

For the Blackberry Jam Layer:

  • 1/3 cup blackberry jam
  • 1/4 teaspoon black pepper
  • 1/4 teaspoon cayenne pepper
  • 1 tablespoon boiling water

For the Chocolate Layer:

  • 1/2 the base ingredient mix
  • 1/4 cup cocoa powder
  • 2 tablespoon sweetener/sugar of choice

For the Oat Crumble:

  • 1/2 cup gluten-free oats
  • 1/2 cup date-soaking water
  • 1/8 cup boiling water
  • A pinch of salt

How to Prepare 4-Layer Blackberry Jam and Chocolate Crumble Bars [Vegan, Gluten-Free]

  1. Line a loaf pan. Mix the oat topping and set aside.
  2. Blend the base ingredients, then layer half of the base mixture in the loaf pan. Set the remaining mixture aside.
  3. Mix the jam layer then smear it on top of the bottom layer.
  4. Blend the other half of the base ingredients with 1/4 cup cocoa powder and sweetener.
  5. Scoop over the jam layer, even it out, then scoop on the oat topping and smooth it over with a spoon.
  6. Freeze for at least an hour before slicing. Store and serve straight from the freezer only.
