It's fall and that means it's pumpkin season. Here's a simple pumpkin pie recipe that everyone will love!

Pumpkin Pie [Vegan]

For the crust

  • 2 cups walnuts
  • 1 cup oat meal (plain is fine too)
  • 1/2 cup flax meal
  • 1 heaped tablespoon of coconut oil
  • Salt

For the filling

  • 1/2 cup walnuts
  • 1/2 cup of coconut cream
  • 1/2 cup of almonds
  • 1 heaped tablespoon of coconut oil
  • 1 splash of oat or nut milk
  • About 650gr of pumpkin
  • 1 ripe banana
  • 2 teaspoons of cinnamon (or more)
  • Salt
  • Add maple syrop if you like it sweet


For the crust

  1. Process all ingredients in a food processor
  2. Spread and press the paste into a dish
  3. Place in the fridge while making the filling

For the filling

  1. Cut the pumpkin into large pieces and cook them in water until soft on the outside
  2. Place everything in the food processor and process until soft and well combined
  3. Adjust the taste with salt and/or maple syrup if necessary
  4. Place the filling on top of the crust and place the whole pie in the fridge for at least 1 hour
