First, there’s the kicky flavor contrast of sweet summer peaches with brightly acidic vine-ripened tomatoes. Second, there’s the fun textural juxtaposition of juicy tomatoes and crunchy grilled bread. The tomato-bread mix is a twist on an Italian Panzanella salad, only here it is used a bit more like a garnish for an arugula, peach, and grilled onion salad. A drizzle of balsamic vinegar, lime, and maple syrup brings together all the flavor points in this colorful mix. If you’ve never grilled peaches before, no worries — it’s much easier than it sounds and quite delicious. You can use nectarines if you like instead.

This Chioggia Beet Arugula and Quinoa Salad is fresh and playful. Arugula, beets, quinoa, and pomegranates are tossed in olive oil and pomegranate syrup dressing for a light and fruity taste. This sweet and colorful salad is a lovely Spring lunch addition.

You’ll surely be the life of the party if you bring this awesome Paleo Seven-Layer Dip. With sunflower seed frijoles, guac, butternut squash “queso,” meat-free chorizo, and more, nobody will believe that this is made entirely from whole foods, plant-based ingredients! Each layer is packed with flavor and nutrients and is gorgeously colorful. Who wouldn’t want to chow down?

These Baked Yam Fries With Spicy Hummus are made with purple yams and baked to crispy perfection! The spicy hummus dipping sauce complements the sweetness of the potatoes. The perfect sweet, spicy, salty snack!

These Easy Marinated and Grilled Portobello Mushrooms are the go-to vegan substitute for several grilled meats, steaks, and burgers. This simple recipe teaches you how to make them packed with umami flavor without using too many ingredients or putting in too much effort! These mushrooms are incredibly versatile; serve them on skewers, over rice, on a burger, and more.

When mashed and mixed with other flavors it creates a texture that is unmatched by beans or tofu alone. This Tempeh Black Bean Burgers With Dill Sauce is perfected by mixing black beans and tempeh and it’s baked, not fried. Pair with the homemade creamy dill sauce for the perfect flavor combo!

This Rhubarb Dream Bar is made with rhubarb and aquafaba, the magical liquid from a can of chickpeas. It’s a meringue base, so the name is quite fitting because they are dreamy like clouds, baked atop a shortbread crust. Enjoy!

Sweet lychees mixed with fresh mint and sparkling kombucha- what a refreshing treat! Lychee is a unique summer fruit that is filled with antioxidants, vitamin C, vitamin B, and folate.
