This week the spotlight is shining on Sara Oliveira of Nem Acredito Que é Saudável!

Sara’s main inspiration to start cooking came from spending time in the kitchen with her grandma. In her blog and book she shares healthy, mostly gluten-free and vegan-friendly recipes. She believes that to eat healthy, clean food doesn’t have to be something boring and monotonous, we just need a bit of imagination and choose the right ingredients.

The tofu filling seasoned with aromatic herbs perfectly combines with the taste of tomatoes and makes for an excellent vegan and fat-free alternative to the fillings normally used in pies and quiches. If you want your cake more colorful, buy cherry tomatoes of different colors!
