Snickerdoodle Cookie Pops [Vegan]

Preparation

  1. Soften cream cheese for a few hours.
  2. Mix cookies in a food processor, stopping to scrape and shake as needed until in crumbles.
  3. Add cream cheese to food processor and mix again.
  4. Give a final mix together with your hands if needed.
  5. Roll into small balls.
  6. Refrigerate for 2 hours.
  7. Melt the chocolate either over a double boiler, or in a microwave at 50% power in 30-minute increments until melted.
  8. Using 2 spoons, dip the balls into the chocolate.
  9. Optional - add a pop stick on top.
