1. Beet & Avocado Soup With Cashew Cream
This raw soup is an excellent starter course for your summer dinner. To make, you just blend the ingredients together and make a cashew cream.

2. Raw Lasagna With Cilantro Pesto, Sun-Dried Tomatoes, and Marinated Vegetables
Your guests are sure to be impressed by this mostly raw dish (you can use hummus which contains cooked chickpeas or opt not to include it). This recipe is made up of marinated veggies with a cilantro-walnut pesto and sun-dried tomato spread in between lasagna layers.

3. Black Bean, Corn, and Walnut Vegan Burger
These colorful burgers look pretty and will fill everyone up. Serve these with avocado or guacamole to complete the flavor.

4. Fresh Veggie Summer Rolls With Spicy Garlic Peanut Sauce
To key to making this recipe is having some vermicelli (rice) noodles and rice paper sheets. Fill the inside with a plethora of veggies, including carrot, avocado, cucumber, basil, cilantro, kale and red pepper.

5. Spicy Sweet Potato Salad
This salad is the best of both worlds: spicy and sweet. This picnic salad is tasty and colorful from the cilantro, scallions, red bell pepper, corn and jalapeno pepper.

6. Pan-Fried Tofu with Zucchini, Carrot and Black Bean Sesame Noodles
For this awesome salad, you can use tofu or opt for seitan or tempeh instead. The garlic, ginger and 5-spice powder give flavor to the black bean, zucchini and carrot noodles.

7. Purple Cauliflower Thai Green Coconut Curry With Carrot Noodles
Purple Cauliflower is fun and colorful, especially when contrasted with orange carrots in this noodle dish. Fun fact: the purple color in the cauliflower is caused by the antioxidant group anthocyanins, which is also found in red wine and cabbage!

8. Nasi Goreng
This dish has a nice textural balance going for it from the cashews, peas, onion, seitan, and Basmati rice.

9. Lime, Mint and Cucumber Noodle Ice Popsicles
These popsicles are delicious and don’t contain any preservatives or artificial coloring. All you need for this recipe is freshly squeezed lime juice, chopped mint, cucumber noodles and water.

10. Mango Sorbet With Banana and Pineapple
Make the bright orange sorbet stand out even more with fresh blueberries and strawberries.
