Blogger Spotlight: Judy Moosmueller of Heart to Plate!

This week, we’re shining the spotlight on Judy Moosmueller, who runs Heart to Plate. Judy’s creative and experimental food choices are always exciting, and she hopes to “give inspiration and awareness for simple, but healthy whole foods and a holistic lifestyle that nourishes body and spirit.” She also states the importance of enjoying your experiences with food, saying “it’s important to me to have fun in the kitchen, experiment and always eat with joy and gratitude.”

We can certainly get on board with that philosophy! With Judy’s belief in the interconnectedness of the world, her food shines as she showcases ingredients thoughtfully and with great awareness. You can hide as many veggies and legumes as you like, depending on what satisfies you best.

This Moroccan Miso, Lentil and Pumpkin Soup is inspired by the fresh, vibrant flavors of Morocco. Although it’s not a traditional Moroccan ingredient, the addition of miso paste gives the soup a deeper, more umami flavor. You can also use a Moroccan spice mix if you don’t have the individual spices listed in this recipe.

12. Nepali Rice Pudding [Vegan]

This Nepali Rice Pudding is a simplified and veganized version of a Nepali Ayurvedic rice pudding. It is traditionally eaten as a “first food” for mothers after birth because it aids digestion and helps rebuild energy. You can eat it as a wonderful cold-weather dessert or breakfast that will nourish you from the inside out!

13. Root Veggie Mash [Vegan]

Potatoes aren’t the only thing you can mash! A mix of root veggies creates a wonderful little side dish that pairs well with practically anything, as you can see with this Root Veggie Mash. Lightly seasoned and perfectly smooth, you’ll love this variation on a classic staple.

14. Blueberry and Acai Berry Cheesecake [Vegan, Raw, Gluten-Free]

Made with natural, low-glycemic sugars and plenty of other wonderfully healthy ingredients like activated nuts, superfoods of dried berry powders such as acai, pomegranate, maca and cacao, this Blueberry and Acai Berry Cheesecake is full of enzymes, minerals, and amino acids. Not only that, but it’s crazy delicious! Raw desserts are the best.

15. Herbed Cashew Cheese [Vegan]

Cashews make a fantastic base for many raw food recipes, like this Herbed Cashew Cheese. In addition to zinc from nutritional yeast and cashews, it contains apple cider vinegar and fresh herbs, which are alkalizing. Goji berries add sweetness, but you can swap it out for your favorite dried berry, eat it plain, or add sun-dried tomatoes to make it savory!
