Potatoes aren't the only thing you can mash! A mix of root veggies creates a wonderful little side dish that pairs well with practically anything!
Root Veggie Mash [Vegan]
- 2 small celeriac
- 2 large carrots
- 2 large Dutch cream potatoes
- 2 cups pumpkin, cubed
- Olive oil
- Salt and pepper, to taste
- Peel vegetables and steam for twenty minutes until soft.
- Pour in a high-speed blender and process until smooth.
- Drizzle with extra virgin olive oil and sprinkle with dukah.
- Season with salt and pepper.
