Our bodies naturally crave warm food during winter, and it’s important that we give it to them. This soup is not only warm and comforting, but nutritionally dense from the amount of greens added to it. Easy to prepare and satisfying to eat!
Nutrient-Dense Broccoli, Peas, and Kale Soup [Vegan, Gluten-Free]
- 1 small broccoli
- 1 small fennel
- 1/2 cup of peas
- 2-3 leaves of kale
- 2-3 leaves of spinach
- 2-3 leaves of silverbeet
- 1 small onion
- nutrional yeast
- some ginger
- Lightly fry onion in coconut oil until golden and slowly add vegetables. Fill up with one cup of hot water/vegetable broth (or less depending on how thick you prefer your soup).
- Cook for 3-5 minutes and set aside to let cool for another few minutes. Then blend in a food processor and serve hot.
- Don't overcook your greens. When they turn yellow they loose their Chlorophyll and texture.
