This pizza crust is wheat-free, gluten-free, yeast-free and grain-free. (A lot of free’s in there...) The base is a combo of vegetables, legumes and seeds which yields high density nutrition. Feel free to add whichever topping suits your taste best.

Sweet Potato, Sesame and Chickpea Pizza [Vegan, Gluten-Free]

Ingredients

Crust:
  • 1 cup ground sesame seeds
  • 1 cup grated sweet potato
  • 1/2 cup of chickpea flour
  • 1/4 cup of coconut oil
  • 1 tsp of dried spices
  • (oregano, basil)
  • sea salt to taste

Topping:

  • 5 cherry tomatoes
  • 2 mushrooms finely sliced
  • 1/2 beetroot finely sliced
  • 1/2 zucchini finely sliced
  • black olives
  • some tomato paste or pesto

 Sprinkle on top:

  • 1 handful of raisins
  • 1 handful of cashews
  • 1 handful of sesame seeds
  • 1 handful of pepitas

Preparation

  1. Process all crust ingredients in a food processor or mixer. Lightly oil a baking tray and spread mixture about 1 cm thick.  Bake for up to 40 min at 150 C.
  2. Spread tomato paste or pesto onto crust and add toppings. You can either stir fry or steam toppings beforehand or sprinkle on top and put back into oven for another 5-10 min.
  3. Season and sprinkle with nuts.
