Maple Chipotle Meatball Grinders [Vegan]

These sandwiches are sweet, savory, and a bit spicy. They have green onions, maple syrup, and Chipotle chilis – a fusion of Asian and Mexican flavors. You can opt to make homemade meatballs for these grinders, or use pre-made ones if you want to speed up the whole process!

Ingredients You Need for Maple Chipotle Meatball Grinders [Vegan]

  • 2 tablespoons pure maple syrup
  • 1-2 tablespoons chopped chipotle chilis in adobo sauce
  • 2 teaspoons apple cider vinegar
  • 2 tablespoons green onions, scallions, or chives
  • 1/4 cup warm water
  • 12 premade or homemade vegan meatballs
  • A handful of arugula or baby kale
  • 2 sub rolls
  • Vegan mayonnaise

How to Prepare Maple Chipotle Meatball Grinders [Vegan]

  1. Heat a medium fry pan over medium heat and spray with olive oil or coconut oil if desired. Brown the veggie meatballs on each side, about 1-2 minutes each side.
  2. While the veggie meatballs are browning, whisk together maple syrup, chipotle chilies, cider vinegar, 1 1/2 tablespoons of scallions and water in a small bowl. Once the meatballs are browned, add the maple chipotle glaze to the pan, reduce heat to low-medium and cook until the glaze thickens, continuously tossing the veggie meatballs to coat with the glaze. Cook about 2-3 minutes until meatballs are well coated and glaze has thickened.
  3. Remove from heat. To assemble the grinders, coat the inside of the sub roll with vegan mayonnaise, layer in the baby kale or arugula, then as many of the maple chipotle veggie meatballs as you desire.
  4. Garnish with additional scallions and serve.
