    Ingredients You Need for Jam Thumbprint Cookies [Vegan, Gluten-Free]

    • 1 1/4 cup almond flour
    • 3 tablespoons vegan butter or coconut oil
    • 1 tablespoon maple syrup
    • 1/2 teaspoon vanilla extract
    • 1/8 teaspoon sea salt
    • Jam or jelly of choice
    • crushed almond, optional

    How to Prepare Jam Thumbprint Cookies [Vegan, Gluten-Free]

    1. Preheat the oven to 325°F. Line a baking sheet with parchment paper.
    2. In a bowl, mix together the butter or coconut oil, maple syrup and vanilla extract. Add the almond flour and sea salt and mix until combined. Wrap dough up and chill 1 hour or overnight.
    3. Using a tablespoon, scoop dough into your hands and roll into a ball. Roll the dough into crushed almonds, if using, and set on the baking sheet. Using your thumb or a measuring spoon, make an indent gently into the middle of the cookie. Repeat with remaining batter.
    4. Fill each cookie with 1/2-1 teaspoon of jam. Bake for 10-12 minutes or until cookies are golden.
    5. Allow cookies to cool fully before transferring to a platter.

    Notes

    These cookies can also be frozen! Simply allow the cookies to cool completely before placing in a freezer-safe bag. Simply remove them from the freezer the night before you need them and allow them to defrost on the counter.
