Climax Foods Launches Artisanal Plant-Based Cheeses Including Blue, Brie, Feta, and Chèvre

California-based biotech startup company Climax Foods has announced the launch of its first “moonshot” artisanal plant-based cheeses. The products will be launched to a select audience in Los Angeles, New York, and San Francisco.

The Moonshot cheeses will include cultured and aged Blue, Brie, Feta, and Chèvre cheeses. The products are “zero compromise” and match the taste, texture, nutrition, and price of dairy cheese. The company also revealed it will be launching the first production facilities soon and will announce its distribution partners.

The cheeses were created using non-allergenic ingredients like seeds, legumes, and plant oils. The cheeses are free from nuts, cholesterol, and GMO ingredients.

“We started from a profound appreciation for the complex flavors and textures of dairy products,” says Climax founder and CEO, Dr. Oliver Zahn. “Cows have made our milk for thousands of years. However, less than 10% of the plants they eat get turned into food for humans, which has led to significant environmental and health problems in today’s much more crowded world.”

“It is human nature to rethink ancient practices, so we came up with a smarter way. By using data science to accelerate plant-based ingredient and process discoveries, we are saving thousands of years of tinkering to create products that are just as tasty as the cow-based predecessors without the downsides, today.”

Climax was founded in 2020 and uses molecular-level learnings about dairy cheeses to make their products. They are building a production hub for their cheeses in Petaluma, California.

There is no such thing as ethical cheese, and there is no way of knowing how the animals have been treated before they reach your plate. The most ethical option is to ditch cheese as well as other animal products entirely and go vegan. If you have the choice, why not choose vegan and cruelty-free?
