‘Tis the season for raspberries. They are dotted like little rubies in gardens and hedgerows all over at the moment. They are showing up in punnets at farmer’s markets and are lining the chilled produce aisles in supermarkets.
Getting raspberries into your diet while they are in season will bring you great rewards. Raspberries are incredibly healthful and boast an impressive list of nutrients. Fresh red raspberries contain significant amounts of vitamins C, K, E, the B vitamins, manganese, iron, magnesium, phosphorus, potassium, and copper. They are also a great source of fiber and are rich in various antioxidants.
One thing about raspberries, however, is that once picked or bought they need to be eaten up quickly. They don’t have a long shelf life and can easily become smooshy! This No-Bake Chocolate Raspberry Tart by Angie Schneider has a hazelnut crust and rich chocolate and mint-flavored stevia filling. The tart is loaded with plump fresh raspberries. You can serve this with a dusting of powdered sugar, coconut cream, or more handfuls of raspberries.
5. Raw Peach and Raspberry Tart with Mascarpone

The crust is made from dates, walnuts, and almonds, and the filling is a creamy cashew mascarpone that is covered in sweet raspberries and peaches. The fruits can be changed throughout the year with whatever fruits are in season.

8. Raspberry and Macadamia Oreo Tart

This cheeky little recipe for a Raspberry and Macadamia Oreo Tart by Medha Swaminathan takes a well-loved sandwich cookie and blends it up with some coconut oil to make a fine crust. The base is then covered with a macadamia nut, raspberry, and coconut milk filling. Use a few more cookies for decoration on the top. This is a fun party tart.
