‘Tis the season for raspberries. They are dotted like little rubies in gardens and hedgerows all over at the moment. They are showing up in punnets at farmer’s markets and are lining the chilled produce aisles in supermarkets.
Getting raspberries into your diet while they are in season will bring you great rewards. Raspberries are incredibly healthful and boast an impressive list of nutrients. Fresh red raspberries contain significant amounts of vitamins C, K, E, the B vitamins, manganese, iron, magnesium, phosphorus, potassium, and copper. They are also a great source of fiber and are rich in various antioxidants.
One thing about raspberries, however, is that once picked or bought they need to be eaten up quickly. They don’t have a long shelf life and can easily become smooshy! 1. Coconut Cream and Raspberry Tart

Believe it or not, this stunning tart leans towards the healthier side of things, at least when compared to other refined flour and sugar counterparts. The filling is a hazelnut-flavored chocolate mousse that is topped with succulent red raspberries.
3. Strawberry and Raspberry Tart With Polenta Crust
This recipe by Camille David takes a traditional idea and gives it a twist. For this Strawberry and Raspberry Tart With Polenta Crust, cornmeal (polenta) is used instead of flour to make a perfectly crunchy crust for this fruit-filled tart. This recipe has no refined sugar but uses coconut sugar and the natural sweetness of the berries instead.
4. No-Bake Chocolate Raspberry Tart
Here is an easy no-bake, gluten-free, and refined sugar-free recipe to try. This No-Bake Chocolate Raspberry Tart by Angie Schneider has a hazelnut crust and rich chocolate and mint-flavored stevia filling. The tart is loaded with plump fresh raspberries. You can serve this with a dusting of powdered sugar, coconut cream, or more handfuls of raspberries.
5. Raw Peach and Raspberry Tart with Mascarpone
Here is another stunning and raw tart to try. Since peaches and raspberries are in season right now, you cannot go wrong with this Raw Peach and Raspberry Tart with Mascarpone by Lisa Pitman. The crust is made from dates, walnuts, and almonds, and the filling is a creamy cashew mascarpone that is covered in sweet raspberries and peaches. The fruits can be changed throughout the year with whatever fruits are in season.
6. Raspberry White Chocolate Tart
This Raspberry White Chocolate Tart by Ivy is more of a traditional take with its shortcrust pastry base. The crust is filled with a light and fruity raspberry mousse, and each little tart is topped with a white chocolate whipped cream. Grated white chocolate finishes off these little treats.
7. No-Bake Chocolate Raspberry Ganache Tart
Here we have yet another no-bake, easy-to-make dessert. This No-Bake Chocolate Raspberry Ganache Tart by Gretchen Price has a delightfully nutritious case made from pumpkin seeds, nuts, oats, and dates. The crust is then lined with a raspberry preserve and covered in a velvety chocolate ganache.
8. Raspberry and Macadamia Oreo Tart
This cheeky little recipe for a Raspberry and Macadamia Oreo Tart by Medha Swaminathan takes a well-loved sandwich cookie and blends it up with some coconut oil to make a fine crust. The base is then covered with a macadamia nut, raspberry, and coconut milk filling. Use a few more cookies for decoration on the top. This is a fun party tart.
9. Bakewell Tart

This is a raspberry version of a classic British treat. This Bakewell Tart by Hannah Sunderani has a shortbread crust that is filled with a thick layer of raspberry chia jam. On top of that is a layer of frangipane, a sweet almond paste. The whole tart is topped with more almonds and fresh raspberries. It is a nutty and fruity delight.
