This soup is the easiest Tomato Basil Soup ever and it’s so fresh & vibrant. For this super simple recipe, you will only need tomatoes, tomato paste, red bell pepper, garlic, onion and fresh basil. Once the onion, garlic, red bell pepper, and tomatoes are cooked together, add the fresh basil and blend together.
Tomato Basil Soup [Vegan, Gluten-Free]
- 6 large tomatoes chopped
- 1 large red bell pepper chopped
- 4 cloves garlic chopped
- 1 onion chopped
- 3/4 cup water
- 1/4 cup fresh basil leaves
- 1 tablespoon tomato paste
- Salt + pepper to taste
Heat a pan over a medium heat and add the a drizzle of olive oil
When hot add the onion and garlic and cook for a couple of minutes until just starting to turn golden.
Add the tomato paste, red pepper, chopped tomatoes + water. Continue to cook over a medium heat, stirring every few minutes until the tomatoes and red pepper have broken down and are soft.
Remove from the heat and add basil and salt and pepper then blitz in a blender or with a stick immersion blender until smooth.
