Ingredients You Need for Turkish Stewed Green Beans [Vegan, Gluten-free]

  • 1 1/2 cups of basmati rice
  • 1/4 cup extra virgin olive oil
  • 1 big onion, finely chopped
  • 17.5 ounces fresh green beans
  • 1 14-ounce can of diced tomatoes or 3 large fresh tomatoes, diced
  • 1 tablespoon tomato paste
  • 2 cloves of garlic, sliced or chopped
  • 1 teaspoon coconut sugar
  • 1 cup hot water
  • Salt
  • Pepper

How to Prepare Turkish Stewed Green Beans [Vegan, Gluten-free]

  1. Rinse the rice well and cook it as per the packet instructions.
  2. Heat the olive oil in a pan and cook the chopped onion until lightly browned.
  3. Clip the tips of the green beans before adding them to the onion. Stir them until they slightly change color. This will take approximately 8-10 minutes.
  4. Add the tomatoes, tomato paste, sugar, and garlic. Let them all cook for 10 minutes.
  5. Add the water and season the dish with salt and pepper as you see fit.
  6. Cover the pan and cook on low until the beans are soft.
  7. You may need to add more water as it keeps cooking. Check on the dish every 8-10 minutes and stir periodically. This should take 35-45 minutes.
  8. Serve with rice hot or by itself cold as a side dish.
