Ingredients You Need for Sweet Potato French Daisies [Vegan]

  • 21-ounces sweet potatoes
  • 1 tablespoon of vegan butter
  • 1 tablespoon of vegan cream
  • 1 tablespoon of cashews (puréed)
  • 1 tablespoon of cornstarch
  • 1 dash of turmeric
  • Nutmeg
  • Salt and pepper

How to Prepare Sweet Potato French Daisies [Vegan]

  1. Cut sweet potatoes into pieces and steam for 4 to 5 minutes until tender.
  2. Purée them.
  3. Pre-heat the oven to 355°F.
  4. Transfer the mashed potatoes to a saucepan and add the spices and margarine.
  5. Heat to dry mashed potatoes, stirring frequently.
  6. When the purée is dry and comes off the edges, add the cashew purée, the cream, and the cornstarch.
  7. Adjust the seasoning and pour the puree into a piping bag with a fluted tip.
  8. On a plate covered with parchment paper form small spirals.
  9. Salt the sweet potatoes and bake for about 20 minutes.
  10. Serve with lentil soup or a chili!
