Salted Caramel Peanut Chocolate Bars [Vegan]
Ingredients
For the Bars:
- 10 Medjool Dates, soaked for 10 minutes
- 1 1/2 tablespoons all natural peanut butter
- 1 tablespoon coconut oil
- 1 teaspoon vanilla extract
- 1/4 teaspoon salt
- 1 tablespoon agave syrup
- 1 tablespoon water
- A handful of roasted peanuts
For the Chocolate Glaze:
- 1/2 cup vegan chocolate chips
- 1/4 cup coconut oil
- 1 teaspoon vanilla extract
Preparation
- Soak the dates for 10 minutes in hot water.
- Blend all other ingredients in a food processor until you have a smooth, sticky paste.
- Spread the paste into parchment paper-lined baking dish using your fingers or a spoon.
- Top the paste with the roasted peanuts.
- Let it set in the freezer for about 30 minutes.
- Once set, cut the paste into bars, add more peanuts (optional), and sprinkle with more sea salt.
- To make the chocolate glaze, melt the chocolate chips and the coconut oil in a double boiler on low heat.
- Stir chocolate constantly until melted and add the vanilla extract.
- Pour the glaze over the bars. Once they have cooled and the chocolate has dried, store the bars in the refrigerator until ready to serve.
