Ingredients You Need for Peanut Butter Berry Cups [Vegan, Gluten-Free]

For the Base:

  • 1 1/2 cups of cooked quinoa
  • 2 teaspoon cinnamon
  • 1 teaspoon vanilla
  • 1 tablespoon agave nectar
For the Chia "Eggs":
  • 3 tablespoons chia seeds
  • 9 tablespoons warm water

For the Cacao Layer:

  • 1 tablespoon raw cacao powder
  • 1 banana
  • 1/4 cup soaked almonds
  • 1 tablespoon coconut oil
  • A splash of coconut milk

For the Berry Layer:

  • 1 cup frozen raspberries
  • 1 tablespoon beet crystals or powder
  • 1/4 cup soaked macadamia nuts
  • 1 tablespoon coconut oil
  • A drop of vanilla
  • A dash of coconut milk

For the Peanut Butter Layer:

  • 1 heaped tablespoon peanut butter
  • 1 banana
  • 1 tablespoon coconut oil
  • 1 tablespoon pumpkin seeds

How to Prepare Peanut Butter Berry Cups [Vegan, Gluten-Free]

  1. Grease a muffin tin with coconut oil.

To Make the Base:

  1. Combine the base layer ingredients in a bowl, stir well and set aside.
  2. Prepare your chia egg by combining the chia seeds with water in a cup. Mix well and set aside for 10 minutes.
  3. While the chia egg sits, gather all of the other ingredients.
  4. Add the chia eggs to your base mixture and stir well.
  5. Using your hands. begin to divide the mixture evenly amongst the muffin tray. There might be some left over.
  6. You can put coconut oil on your hands to avoid sticking, but make sure you press the mixture down so you create a really good base for the next layers.
  7. Pop the tin in the freezer for around 10 minutes to let it set.

To Make the Other Layers:

  1. Choose how you want to layer the flavors and start by blending the first layer until smooth, Evenly cover the base layer and pop the muffin tin into the freezer for about 10 minutes.
  2. Repeat this step for the remaining layers. Once finished, set the muffin tin in the freezer overnight.
  3. To remove the peanut butter berry cups, use a hot knife to create a ring around the muffin tins.
  4. Top with fruit and nuts or serve as is. Store leftovers in the freezer.
