For the Cashew Sauce:

  • 1/2 cup olives
  • 3 1/2 cups mushrooms
  • 1 1/2 cups marinara sauce of your choice
  • 3 cups rigatoni

How to Prepare Pasta Pie [Vegan]

  1. Cook the pasta but al dente.

To Make the Cashew Sauce:

  1. Combining cashews, vegetable broth, and water in a bowl of a food processor or blender. Process until smooth.
  2. Briefly fry the mushrooms with a little splash of olive oil. If you want to make it oil free, skip the oil and use a dash of water or vegetable broth instead. Add olives and marinara.

To Assemble the Pie:

  1. Sprinkle the form with a bit of olive oil (or carefully prep it with parchment paper). Start with setting the pasta short end down, make sure they stand firm. Next comes the mushroom marinara mixture. Finally top with cashew sauce. Bake for 15 minutes.

  1. I didn\’t realize until too late there is no temperature setting given for the oven, and also not a real clear indicator on what pan to use. Springform? 9" cake pan? Who knows? Anyway, we\’ll see how it turns out…
