Ingredients You Need for Orange Olive Oil Rolls [Vegan]

For the Dough:

  • 1 3/4 cups very warm water
  • 1 teaspoon active dry yeast
  • 2 tablespoons granulated sugar
  • 4 3/4 cups all-purpose flour, more as needed
  • 3 teaspoons table salt
  • 1/2 cup extra light olive oil

For the Filling:

  • 1 cup granulated sugar
  • Zest from 2 oranges
  • 3 tablespoons freshly squeezed orange juice
  • 1 tablespoon freshly squeezed lemon juice

For the Glaze:

  • 1/2 cup confectioners sugar
  • 1-2 tablespoons freshly squeezed orange juice
  • 1/4 cup chopped almonds, slightly toasted

For the Optional Topping:

  • Chopped almonds

How to Prepare Orange Olive Oil Rolls [Vegan]

To Make the Dough:

  1. In the bowl of a stand mixer fitted with the hook attachment, combine the warm water with yeast and sugar. Allow to rest for 5 minutes to let the yeast foam a bit. Add 2 1/3 cups of flour. With the mixer on low speed continue adding the rest of the flour allowing mixer to mix it all together. When the dough has come together in a shaggy ball, pour in the olive oil in a drizzle as the dough hooks keep stirring.
  2. Knead on medium-low speed until smooth and elastic, 6 to 8 minutes. Lightly oiled a large bowl. Form the dough into a ball, set it in the prepared bowl, and cover with plastic wrap. Set aside in a warm spot until it has almost doubled in size, 1 to 2 hours.

To Make the Filling:

  1. In a medium bowl, combine the sugar with the orange zest, let it rest for 1 hour.
  2. Add the orange juice and lemon juice and mix until it has a wet sand consistency. Set aside.

To Make the Rolls:

  1. Grease a 9x13-inch baking dish.
  2. Punch down the dough and turn it out onto a very lightly floured surface. With a lightly floured rolling pin, roll it into a 12x16-inch rectangle. Spread the orange sugar evenly over the entire surface, leaving 1/2 inch clear around the edges.
  3. Starting at a long end, tightly roll the dough into a log and pinch the long seam and ends closed. With a serrated knife, cut the roll crosswise into 12 equal pieces. Pinch the cut sides to seal as much as possible.
  4. Set the pieces in the prepared dish, pinched side down. Cover with plastic wrap and let sit at room temperature until the dough is pillowy, approximately 1 hour.

To Make the Glaze:

  1. Heat the oven to 350°F.
  2. Uncover the rolls and bake until golden brown, 40-45 minutes. Transfer the baking dish to a rack to cool until warm, about 20 minutes.
  3. Meanwhile in a small bowl, whisk the confectioners sugar with the orange juice, keep whisking until smooth. If the mixture is too watery, you can add more confectioners sugar, and if it’s too thick, add more orange juice
  4. Drizzle over the warm rolls. Sprinkle the almonds over the rolls while the glaze is still sticky. Pull the rolls apart and serve warm.
