Ingredients

For the Peanut Butter Layer:

  • 1 cup natural creamy peanut butter
  • 1/4 cup tablespoons pure maple syrup
  • 1 1/4 cups gluten free rolled oats

For the Vegan Chocolate Topping:

  • 1/2 cup vegan dark chocolate
  • 1/4 cup peanut butter

Preparation

For the Peanut Butter Layer:

  1. Line an 8-inch square baking pan with parchment paper and set aside.
  2. In a medium, microwave-safe bowl, add peanut butter and microwave for around 20 seconds, until the peanut butter is warm.
  3. Add the maple syrup and mix together
  4. Add in the oats and mix until combined.
  5. Transfer this mixture into the prepared baking pan. Using a spatula, smooth into an even, tightly-packed layer.

For the Vegan Chocolate Topping:

  1. Melt the chocolate and add the peanut butter. Stir until smooth.

To Assemble:

  1. Pour this chocolate mixture over the bars and smooth into an even layer
  2. Freeze for 30-40 minutes, or until firm. Remove from freezer and slice into squares. Keep refrigerated
