Wonderfully addictive and delicious, these lentil bites are loaded with fresh green leafy spinach and protein packed from wholesome tofu and sprouted lentils. Don't let the word "fried" deter you either, these little bites are good for you! Dip them into vegan mayonnaise for a tasty and healthy snack.

Ingredients You Need for Fried Tofu Lentil Bites [Vegan]

For the Bites:

  • 1/2 cup green lentils or red lentils, soaked for at least 2 hours
  • 1 cup of spinach leaves, washed, sliced into thin shreds
  • 7-ounce package of silken tofu, diced into cubes (no need to press it)
  • 1/2 teaspoon salt
  • 1 teaspoon sugar
  • Pepper, to taste
  • 3/4 cup all-purpose flour
  • Vegetable oil, for frying
  • Vegan mayonnaise (optional)

How to Prepare Fried Tofu Lentil Bites [Vegan]

  1. Add all the ingredients, except the flour and oil, into a bowl.
  2. Squeeze and mix all the ingredients together using hands.
  3. Add the flour and mix thoroughly.
  4. Heat oil in pan at medium heat.
  5. Scoop up teaspoon size of mixture, roll into small ball and gently place into hot oil.
  6. Fry until golden brown and scoop up onto paper towel plate.
  7. Serve immediately with vegan mayonnaise.
