Coconut Berry Smoothie Blocks [Vegan, Grain-Free]

This recipe combines bananas, blueberries, blackberries, coconut yogurt, and coconut milk for a delicious drink. Freezing up the smoothie mixture into blocks is a great way to meal prep your breakfasts or snacks for the week! When your craving the smoothie, just add as many blocks as you want and some non-dairy milk to your blender and voilá.

Coconut Berry Smoothie Blocks [Vegan, Grain-Free]

Serves

10-15 blocks

Ingredients

  • 1/2 cup of chopped bananas
  • 1/2 cup and 2 tablespoons blackberries
  • 2/3 cup blueberries
  • 1/2 cup coconut milk
  • 3 tablespoons coconut yogurt

Preparation

  1. Add the banana, blackberries, blueberries, coconut milk, and coconut yogurt into a blender and blend until smooth.
  2. Pour into a glass to serve. Or, pour the the smoothie mixture into an ice cube tray and freeze overnight or to save for later.
  3. When ready to use them, take some of the frozen blocks, add some more coconut milk and any other ingredients, and blend into a cooling, refreshing drink.
