Ingredients You Need for Chocolate Coconut Bites [Vegan, Gluten-Free]

For the Coconut Bites:

  • 1 cup desiccated coconut
  • 4 tablespoons vegan caramel sauce
  • 1 tablespoon coconut sugar
  • 3 tablespoons coconut milk from a carton
  • 2 tablespoons coconut oil

For the Chocolate Coating:

  • 5.3 ounces vegan dark chocolate
  • 1 teaspoon coconut oil

How to Prepare Chocolate Coconut Bites [Vegan, Gluten-Free]

  1. Firstly, melt the coconut oil on a low heat, and set it aside – so it’s not hot for when you combine it with the other ingredients. Then, add the desiccated coconut, coconut sugar, caramel, coconut milk, and coconut oil into a large mixing bowl and mix everything together until everything has combined.
  2. When this is done, line a baking tray with greaseproof paper. Then, press the mixture into about 12 balls, and place them onto the tray. Next, move the tray into the freezer and leave the bites for about 25 minutes to firm up.
  3. When 20 minutes have passed, begin to melt the chocolate. Place a pan onto a low-medium heat and add a couple of inches of water. When the water begins to boil, place a heatproof bowl on top, break up the chocolate, and add it into the bowl with the coconut oil. Stir gently until the mixture has melted. When the mixture has melted, remove the pan from the heat and set the chocolate aside to cool (but not cool enough so it sets).
  4. When the chocolate has cooled enough, remove the bites from the freezer. Take one of the bites off of the tray, dip it into the chocolate to coat it, then place it back on the tray. Then, repeat this process with the rest of the bites. After all of them have been coated, place them back in the freezer for 2 minutes.
  5. After 2 minutes, take the bites back out of the freezer, and dip each of them in another layer of chocolate. Then, place them back in the freezer for another 2-3 minutes.
  6. At this point, there should still be some chocolate left. So, after 2 or so minutes, remove the bites from the freezer and drizzle them with the remaining chocolate to finish.
  7. Lastly, place them back in the freezer for a final 5 minutes. Then, serve them or move them to the refrigerator to keep cool in between eating.
