Chocolate Chip Cookie Bars [Vegan, Gluten-Free]



  • 1 1/2 cups all-purpose flour
  • 1 1/2 teaspoon baking powder
  • A pinch of salt
  • 1 tablespoon vanilla
  • 1/4 cup almond butter
  • 3/4 peanut butter
  • 1 cup sugar
  • 1/4 cup unsweetened original almond milk
  • 1/2 cup vegan chocolate chips


  1. Preheat oven to 350°F.
  2. Grease an 8 x 8 baking dish.
  3. Line it with parchment paper.
  4. In a medium bowl, sift together the flour, baking powder, and salt.
  5. In a large bowl beat together to vanilla, the butters, and your sugar until they're light and fluffy.
  6. Stir in the milk.
  7. Add the dry ingredients to the wet.
  8. Mix the ingredients together until it all starts to stick to one another.
  9. Add the chocolate chips and mix until they're evenly incorporated.
  10. Pack the dough into the baking dish.
  11. Sprinkle some more chocolate chips on top.
  12. Bake for 25-30 minutes. Allow the bars to cool for a few minutes before serving.
