This mayo, which is lighter in texture and flavor than classic mayonnaise, can be used as a base for many different dressings. Make it your own by stirring in your favorite spices or herbs.
Avocado Soy Mayo [Vegan]
- 1/3 cup unsweetened soy milk
- 2 tablespoons fresh lemon juice
- 3/4 teaspoon salt
- 1/3 cup plus 2 tablespoons canola oil
- Place the soy milk, lemon juice, and salt in a medium bowl. Using an immersion blender, blend until combined, about 10 seconds. With the motor running on low speed, slowly stream in the canola oil until the mayo is creamy and emulsified, about 20 seconds.
Store the mayo in a resealable container in the refrigerator for up to 1 week.
