  • 1/3 cup unsweetened soy milk
  • 2 tablespoons fresh lemon juice
  • 3/4 teaspoon salt
  • 1/3 cup plus 2 tablespoons canola oil

Preparation

  1. Place the soy milk, lemon juice, and salt in a medium bowl. Using an immersion blender, blend until combined, about 10 seconds. With the motor running on low speed, slowly stream in the canola oil until the mayo is creamy and emulsified, about 20 seconds.
