Ingredients You Need for Apple Cider Protein Doughnuts [Vegan, Gluten-Free]

For the Dry Ingredients:

  • 2 cups gluten-free flour
  • 1/4 cup coconut sugar
  • 3 tablespoons vegan vanilla protein powder of choice
  • 2 teaspoons baking powder
  • 1 teaspoon baking soda
  • 2 teaspoons ground cinnamon
  • 1/4 teaspoon ground nutmeg
  • 1/4 teaspoon ground ginger
  • A pinch of salt

For the Wet Ingredients:

  • 1 cup apple cider
  • 2 teaspoons apple cider vinegar
  • 1/4 cup melted coconut oil
  • 1 teaspoon of vanilla extract or 1/2 teaspoon of vanilla paste

For the Optional Topping:

  • 1/4 cup of coconut sugar or cinnamon sugar blend
  • 1/4 cup of melted coconut oil

How to Prepare Apple Cider Protein Doughnuts [Vegan, Gluten-Free]

  1. Whisk dry ingredients together and set aside.
  2. Add the wet ingredients to a small saucepan and whisk together until combined. Remove from heat and let cool.
  3. Add the dry and wet ingredients to your stand mixer or bowl and blend with a mixer. Avoid over-mixing.
  4. Preheat your oven to 350°F. Spray your mini doughnut pan, take a meatball-sized amount of dough, and press it into the pan.
  5. Bake for about 14-16 minutes or until golden and springy when you push on the doughnut.
  6. Remove and let cool for about 3-4 minutes. In the meantime, prep your toppings.
  7. First, dip your doughnuts in the melted oil and then dip them in the cinnamon mixture. Consume immediately.
