While cauliflower may not be the first ingredient that comes to mind when you think of this classic dish, don’t be too skeptical. It adds a perfectly creamy cheesiness to the sauce that is super light and fluffy at the same time. The cauliflower cheese sauce is surprisingly addictive. The other great thing about vegan Mac n cheese is that there are so many fun variations of the dish, so you can put your spin on it depending on what your taste preferences are.

The Basic Ingredients You’ll Need:

  • head of cauliflower
  • almond milk
  • Yukon gold potatoes
  • raw cashews
  • carrots
  • vegan butter
  • cayenne pepper
  • turmeric powder
  • nutritional yeast
  • sea salt
  • paprika
  • garlic
  • black pepper

The Basic Steps:

  1. Place the raw cashews in a medium bowl with boiling water. Let them soak for 30 minutes.
  2. Peel and cut the Yukon gold potatoes and carrots. Add them to a saucepan with water and bring to a boil. Cook at a low temperature until the veggies are tender, then remove from the heat.
  3. Drain the veggies and add the cashew, carrots, and potatoes to a blender.
  4. Add the non-dairy milk, nutritional yeast, garlic, and the rest of the spices to the blender. Blend until smooth and adjust to taste.
  5. Preheat the oven to 350 degrees, cut the cauliflower into bite-sized pieces, and steam until tender.
  6. Spray a baking dish with oil and add the cauliflower and the cheese sauce. Combine well.
  7. Bake for about 20 minutes and enjoy!
