Source: Strawberry Rhubarb Crumb Pie
In this Strawberry Rhubarb Crumb Pie by Renee Press, fresh sweet strawberries and tart rhubarb fill a buttery gluten-free crust, topped with an oat and brown sugar crumb topping. You can easily use wheat flour instead of the gluten-free flour if you prefer, simply sub it in 1:1 and leave out the xanthan gum (only used to help bind gluten-free baked goods) The ingredient list and steps look intense, but it’s not. Most of the ingredients are used in all three parts of the recipe so it’s quite simple. You can leave out the crumb topping if you want to save a few minutes, still delicious with or without.
Source: Strawberry Rhubarb Pie with Pistachio Oat Crisp
With a little bit of preparation, this Strawberry Rhubarb Pie with Pistachio Oat Crisp by Elsa Brobbey is a relatively simple pie to make. Feel free to experiment with other fruit, tweak the recipe and make substitutions! The delicate crust is flaky but simple as well. A sweet buttery, oaty, and granola-like pistachio crumb topping finishes off the pie adding texture and crunch – it’s nutty and delicious. An essence of cinnamon weaves through the crust, filling, and topping which ties it together, giving it a little bit of warmth.
Source: Strawberry Rhubarb Muffins
These Strawberry Rhubarb Muffins by Jesse Jane Lee are a fantastic grab-and-go breakfast or the perfect snack. They are packed with fiber and protein because I used almond flour and protein powder in the batter. I love how the strawberries are little bursts of sweetness and the rhubarb is super sour.

These Coconut Rhubarb Scones With Fresh Strawberry Glaze by Tracey Tytko are absolute heaven; fluffy, moist, fruity, tart, and semi-sweet! This recipe is super easy to make and takes a short 25 minutes altogether. The scones are the perfect treat to make on a lazy Sunday morning or ahead of time for a sweet treat. Add one of these scones as part of a hearty breakfast in bed or make them for the whole family to enjoy together!

It’s a pie, it’s a cheesecake – it’s both! This silky-smooth Raw Strawberry Rhubarb Cream Pie by Kimmy Murphy is somewhere in between a pie and a cheesecake. The nutty, crumbly crust is held together by a sweet, sticky date paste and then topped with luxurious cashew, strawberry, and rhubarb cream and chilled until it’s firm. This is a wonderful way to finish off a warm summer night.

Nothing says “classic” like a Strawberry Rhubarb Pie by Lisa Lotts — especially a strawberry rhubarb pie with a lattice crust. This is the kind of pie you’d expect to see cooling on a windowsill. A brush of coconut cream helps the sprinkling of demerara sugar stick to the crust, giving the top of the pie a golden brown sparkle.
