Source: Pear-fect Baked Oatmeal
Upgrade your boring bowl of oatmeal for a hearty baked version! This Pear-fect Baked Oatmeal by Melanie McDonald is filled with wholesome oats and studded with sliced, juicy pear and crunchy chopped almonds. It’s kind of like a cross between cake and a soft oaty bar. It’s fancy enough to serve for brunch and easy enough to make ahead for super- quick breakfasts throughout the week. I love to serve it warm, cut into squares and drizzled with drippy almond butter and maple syrup! Source: Plum Pie
Many people think that a gluten-free and vegan pie crust is boring and bland. But this pie crust is anything but. It is satisfying, delicious, and healthy. The crust is neither heavy nor greasy and it’s full of flavor and is perfect in this Plum Pie by Julie Zimmer. It has a rich wholesome nutty taste and a crumbly-crispy texture. It also holds well together and can be the base for all sorts of fruit pies, pecan pies, or even cream or pumpkin pies. In fact, the crust is just as tasty as the topping. It also handles well and is all made in the bowl of a food processor.

Is there anyone out there who doesn’t like garlic knots? There is nothing to dislike about them. These Sriracha Garlic Knots by Megan Calipari are soft inside with a crunchy exterior, covered in garlic (vegan) butter and herbs. They are wonderful plain or dunked into your favorite homemade marinara.

Source: Black Bean Loaf
A savory bean-based take on the traditional meatloaf. This dish comes together with black beans, oatmeal, and a medley of spices. This Black Bean Loaf by Natasha Condie has a nice crust and soft interior that just melts in your mouth. I do think that a vegan meatloaf pretty much *needs* a little coating of ketchup baked into the top, but if that’s not your thing, then it’s not absolutely essential. Use any tomato sauce to serve, I just mixed 50-50 homemade tomato sauce and ketchup. This vegan meatloaf will be a hit at your next dinner party! Serve it with a side of creamed spinach and mashed potatoes for a hearty comforting, and tasty meal!
