1. CBD Stir Fry

At this time of year, I love cooking dishes that I can throw together. All of the elements from this stir-fry last for a good amount of time and take just a little prep work. The best part of this CBD Stir Fry by Lauren Lovatt is perhaps the wild rice, which is in fact not a rice at all. I discovered this way of ‘blooming’ wild rice a few years ago when I was teaching in Barcelona and I’ve been taken by it ever since. A great way to increase variety in your meals is to include less common plants and the ‘rice’ provides a totally different nutty texture and technique to this dish.

2. Pear and Parsley Smoothie

When one has committed to consuming a green smoothie (or two) each day, one also has to commit to trying different ingredients so as not to get bored of the usual smoothie ingredient suspects (not that there is anything wrong with my good friends, kale and oranges). This Pear and Parsley Smoothie by Annie Oliverio is a great combination because it isn’t too sweet and it’s very refreshing.

3. Creamy Millet and Cashew Pudding

Serve this Baked Spinach With Tofu Ricotta and Nutmeg Dip by Clémence Moulaert with some fried mushrooms, but I think this would be lovely with some pasta, or served on warm ciabatta bread.

When it comes to vegan cupcakes, adding berries is always a good idea because it creates the perfect balance of sweetness and tartness. You can either make your own jam or just buy it at the market! Whatever you decide to do, get creative! Try strawberry, blueberry, or raspberry-filled! The combination of soft vanilla cake and berry jam is divine. Tastes just like summer! This Mixed Berry Jam Filled Cupcakes by Holly Jade is so simple that you don’t even have to use a stand mixer! It’s also so yummy!

Using a brown sugar simple syrup, peach purée, freshly squeezed lemon juice and a dash of Angostura bitters, this Peach and Love by Adam Merrin and Ryan Alvarez is wonderful and if you’re not already on your way to purchase—or “borrow” from your neighbor—this fruit before those fall pumpkins start taking over our lives, your tastebuds will never forgive you.

This seitan pastrami is mouthwateringly delicious and tastes just like it has been sliced fresh and served up hot from the deli counter. This Carving Board Seitan ‘Pastrami’ by Joni Marie Newman is a salty, savory deli-casy will make you the sandwich of your dreams or you can just eat it as is – it’s that good!
