How to Prepare Toast With Mint Artichokes [Vegan]
- Clean the artichokes leaving only the hearts, cut them in 4 parts and let them marinate in the juice of a lemon half an hour. You can also use frozen artichokes already cut.
- Boil water with a little salt in a pot and cook the artichokes until they are soft 15-20 minutes. Drain well and reserve.
- In a bowl mix the olive oil, juice of half a lemon, the leaves of a chopped mint branch. pepper and salt. Put the artichokes in the bowl, mix well and leave them for 2 hours marinating depending on the intensity of flavor you want to achieve.
- Slice the onion in julienne, brown it with a little oil and reserve.
- Toast the slices of bread and cover them with onion strips. On top place the artichokes and sprinkle over with grated vegan cheese. Preheat the oven and bake the toast for 5 minutes until the cheese melts.
