This is how unprocessed vegans celebrate birthdays. We make Chocolate Peanut Butter & Banana Maple Crepe Cakes, and don’t feel an ounce of guilt eating them. Why the heck should we? We eat like kings all day every day. We have delicious smoothies and vibrant salads, an array of veggies as far as the eyes can see. Grains that fill our bellies, seeds that protect our hearts, and legumes that help keep us slim and slender. Birthdays are meant to be celebrated. We do them right. It’s not just another year gone by, but another year of vibrant health and endless possibility. Let’s celebrate it!

Ingredients You Need for Grain-Free Birthday Cake [Vegan, Gluten-Free]

For The Cake
  • 3.5 cups Garbanzo Flour
  • 1/2 cup maple syrup (organic grade A)
  • 3/4 cup date crystals (blended)
  • 2 3/4 cups water
  • 1 tsp vanilla extract
  • 1 tsp baking powder
  • 1/4 tsp salt
  • 3/4 cups creamy peanut butter
  • 1/2 cup maple syrup (organic grade A)
  • 6 teaspoons water
  • 6 teaspoons cocoa powder

How to Prepare Grain-Free Birthday Cake [Vegan, Gluten-Free]

  1.  Pour 3.5 cups garbanzo flour into mixing bowl with salt, baking powder, cinnamon and date crystals. Stir. Add water and maple and stir until combined.
  2.  Grease cake pan well and remember to include the sides with about 1 teaspoon of oil per pan. You’ll need three pans or need to bake three separate times. If you’re using the same pan, wash it completely clean before each use. The cake will stick otherwise. I may, or may not have used the one pan method. What a B-word.
  3. Scoop 1.5 cups batter and spread evenly. Cook for 10- 12 minutes. The center may balloon upwards during cooking. It will fall back down once out of oven.
  4. Once removed from oven, let cool COMPLETELY before removing from pan. This is key friends. If you don’t and the cake crumples, I don’t want any hate mail!
  5. Repeat step 2 & 3 two more times. Grease that pan baby.
  6.  Frosting time. Combine all ingredients. I have super creamy PB. If yours seems too thick add a little more maple.
  7. Assemble cake, frosting, and fruit, repeat. Serve and top with warm maple syrup. Enjoy!
