    The “Best You Ever Had” Tofu Breakfast Scramble [Vegan]

    Here’s a tofu scramble you can get excited about! It’s not an attempt to replicate scrambled eggs, just another splendid option to add to your breakfast roster. And whether you’re an egg or tofu lover or neither, I think you’ll find this scramble surprisingly delicious.

    Ingredients You Need for The “Best You Ever Had” Tofu Breakfast Scramble [Vegan]

    For the Tofu Mixture:

    • 1 1/2 tablespoons unrefined virgin coconut oil
    • 1 tablespoon extra-virgin olive oil
    • 1/2 teaspoon turmeric powder
    • 1/2 teaspoon ground coriander
    • 1/4 teaspoon garlic powder
    • A few turns of fresh cracked black pepper
    • 1 (14 oz) package extra firm tofu*
    • 1 teaspoon fresh thyme leaves
    • 1/2 teaspoon sea salt, or to taste
    • 1/2 teaspoon Himalayan black salt, aka “kala namak”*

    For the Peppers and Onions:

    • 1 tablespoon extra-virgin olive oil
    • 2 scallions, chopped
    • Approx. 1 cup red bell pepper, diced
    • 1/4 teaspoon sea salt

    How to Prepare The “Best You Ever Had” Tofu Breakfast Scramble [Vegan]

    1. Drain tofu, pat dry with a clean towel, then set aside.
    2. For the tofu mixture, add the coconut and olive oils to a skillet over med-low heat, then stir in the turmeric, coriander, garlic powder, and black pepper.
    3. Break tofu apart into crumbles while adding to the skillet. Use a spatula to continue breaking down the tofu until you get an even “scrambled egg-like” texture, then add the thyme leaves, 1⁄2 tsp salt, and black salt. Continue cooking for another 7-8 minutes over medium to med-low heat, stirring throughout.
    4. For the peppers and onions, in a separate skillet, warm the olive oil, then add the onions, bell peppers, and 1⁄4 tsp salt. Sauté about 2-3 minutes over medium heat, stirring frequently throughout until the peppers soften.
    5. Add the peppers and onions to the tofu and stir to evenly combine. Enjoy with one or more of the recommended pairings!

    Notes

    Any tofu brand will work great here, but I really like the taste and consistency of the Hodo brand extra firm tofu. I’ve tried a lot of different brands, and this one really stands out. It should be noted that their package size is 10 oz (compared to the standard 14 oz of many other brands), so if you use this brand for the scramble, you might have to scale down the salt measurement a little.
