I love getting a fresh sweet smelling pineapple from the market. I don’t know why I don’t get more than one or two as it seems they disappear all too quickly. Pineapple, bananas, cranberries, and pecans are alchemically combined for bliss in each bite. The crust is made with pecans and cranberries, topped with banana slices, pureed pineapple, more banana slices and cranberry gems for a beautiful dessert. With no refined sugars, dairy, or gluten you can have more than one and still feel great!

Ingredients You Need for Pineapple Paradise Cups [Vegan]
How to Prepare Pineapple Paradise Cups [Vegan]
- Process pecans in a food processor to create pecan meal. Add 1/4 cup of the cranberries and process until the mixture is sticky. Divide evenly in six cupcake liners. I prefer silicone for non-stick.
- Slice 1 banana and place banana slices on top of the crust, creating a banana layer.
- Pour the 3/4 cup pureed pineapple on top of the banana layer, spreading evenly over the six treats. Decorate with remaining cranberries and banana slices.
- Freeze for 4+ hours, until solid. Remove from freezer, allow to thaw for 5 minutes, or until you can enjoy easily.
Notes
Use your favorite nut or seed to create the meal.
Use raisins or your favorite dried fruit.
Use your favorite fruit puree.
