How to Prepare Sweet Potato Chickpea Quinoa Burgers [Vegan, Gluten-Free]

  1. Preheat the oven to 400°F. Place sweet potato halves on a baking dish, flat side down. Let them cook for 25-30 minutes, or until they are soft to the touch. Pull them out of the oven to cool.
  2. Once cooled, remove the sweet potato from the skins. Discard the skins and set the sweet potato aside.
  3. In a food processor, blend 1 cup of old fashioned oats until roughly ground. Pour into a separate bowl and set aside. Into the food processor, now add chickpeas, quinoa, red onion, cilantro, and spices. Pulse for a few times until just mixed, then add the sweet potato and blend until everything is combined. Last, add the ground oats and blend until just mixed. You want the mixture to still have a chunky texture, which helps the burgers keep their shape.
  4. Spray nonstick cooking spray onto a skillet and place over medium-high heat. Form the burgers into medium sized patties and add 3-4 onto the skillet at a time. Cook each side for 4-5 minutes, or until each side is browned and the center is cooked through.
  5. Assemble each burger on a whole wheat bun with some red onion, fresh tomato, and spicy brown mustard. Serve.

  1. This recipe says "3 sweet potatoes" but gives no indication of size of potatoes. I would like to use some canned pureed sweet potatoes I have on hand, but am unsure as to the amount to use. Can you please clarify this for me? Thanks! :)
