Strawberry and Lemon Cat Cookies [Vegan]

These strawberry lemon cookies are the cat's meow – but seriously they are incredible. The light, buttery cookie dough is enhanced by a homemade strawberry compote and then finished with a delightfully simple frosting. These cookies will provide you with the perfect canvas to get creative in the kitchen.

Ingredients You Need for Strawberry and Lemon Cat Cookies [Vegan]

  • 1 cup flour
  • 1 cup rye flour
  • 1/3 cup vegan butter
  • 1/3 cup powdered sugar
  • 1/2 lemon, juice and peel
  • A handful of strawberries
  • 2 teaspoons baking powder
  • A pinch of salt
  • 1 chia egg (1 tablespoon chia seeds plus 3 tablespoons warm water)

How to Prepare Strawberry and Lemon Cat Cookies [Vegan]

  1. Wash and roughly chop the strawberries and place into a small saucepan.
  2. Add a tablespoon of lemon juice and mash it together with the strawberries using a fork or potato masher and gently heat it.
  3. After around 5 minutes, the strawberries will start to condense down. You will need to keep stirring with a wooden spoon so the strawberries don't stick to the pan.
  4. Let this reduce to 1/4 of its original mass before removing it from the heat and setting it aside.
  5. Preheat your oven to 350°F and line a cookie sheet with parchment paper.
  6. Add the butter and sugar to a blender and mix them until they're light and fluffy.
  7. Add the chia egg along with the lemon juice and the peel.
  8. Gently fold in the strawberry purée, salt, baking powder, and flour using a wooden spoon or clean hands until everything comes together.
  9. Lightly flour a clean worktop and roll out the dough using a rolling pin until around 1/2 inch thick, and using your desired cookie cutter shapes, cut out the cookies and place onto the lined baking tray.
  10. Pop the tray into the middle of the oven for 6-10 minutes, or until the edges start to turn golden brown.
  11. Once they have fully baked, carefully remove them from the oven and place onto a cooling rack. Make sure they're fully cool before you decorate them.
  12. Lightly dust some icing sugar over your work surface, apply your desired food coloring to the white icing and kneed it.
  13. Brush some lemon juice to the back of the shapes and carefully place a piece of strawberry on top of the cookie for the nose.
