Ingredients You Need for Stracciatella Muffins [Vegan]

  • 1 cup soy milk
  • 1 tablespoon vinegar
  • 8 1/2-ounces flour
  • 3 1/2-ounces white sugar
  • 3/4-ounce grams brown sugar
  • 2 packs vanilla sugar
  • 1 package baking soda
  • 1/2 teaspoon salt
  • 2 tablespoons oil
  • 5-ounces vegan chocolate chip or finely grated chocolate (bittersweet)

How to Prepare Stracciatella Muffins [Vegan]

  1. Preheat the oven to 355°F.
  2. Mix the soy milk with the vinegar and set aside.
  3.  In a large bowl, stir well the flour, sugar, vanilla sugar, baking powder, and salt. Add oil and soy milk and mix to a half-smooth dough (with a spoon, not with the blender).
  4. Carefully fold in the chocolate chips. Divide into 12 prepared muffin molds and bake 18-20 minutes until a toothpick comes out without sticky dough residue.
