How to Prepare Stracciatella Muffins [Vegan]
- Preheat the oven to 355°F.
- Mix the soy milk with the vinegar and set aside.
- In a large bowl, stir well the flour, sugar, vanilla sugar, baking powder, and salt. Add oil and soy milk and mix to a half-smooth dough (with a spoon, not with the blender).
- Carefully fold in the chocolate chips. Divide into 12 prepared muffin molds and bake 18-20 minutes until a toothpick comes out without sticky dough residue.

This sounds delicious! however the recipe refers to packets of vanilla sugar and baking soda. Would these be equal to about a teaspoon each?
