Stollenkonfekt (Stollen Confection)

Traditional stollen recipes use yeast, but this version of the stollen uses baking powder instead. It tastes so delicious and can be made very quickly without yeast.

Ingredients You Need for Stollenkonfekt: Holiday Stollen Confection [Vegan]

  • 3.5 ounces plant-based butter
  • 2.65 ounces cane sugar
  • 5.3 ounces plain soy yogurt (quark)
  • 10.6 ounces spelt flour
  • 1 teaspoon cinnamon
  • 1/2 package baking powder
  • 1.76 ounces almonds, chopped
  • 5.3 ounces raisins
  • Rum
  • orange peel
  • 4.4 ounces icing sugar
  • 3.5 ounces plant-based butter

How to Prepare Stollenkonfekt: Holiday Stollen Confection [Vegan]

  1. Preheat oven to 350°F.
  2. Line two baking sheets with parchment paper.
  3. Mix flour with baking powder and cinnamon, put aside.
  4. Stir the butter with the sugar, add the plain soy yogurt and the orange peel.
  5. Add the prepared flour mixture, stir in briefly, then add almonds and raisins.
  6. Add rum until you get a firm dough.
  7. Shape dough into walnut-sized balls.
  8. Place on the prepared trays. If you have a large oven, you can bake both baking trays at once.
  9. Bake for about 10-15 min.
  10. Melt the butter in a small saucepan.
  11. Coat the Stollen confectionery with warm butter and sprinkle with icing sugar (or roll in it).
  12. Leave to stand for at least one day in a tightly closed container.
