Ingredients You Need for Slow Cooker Smashed Potatoes [Vegan, Gluten-Free, Nut-Free]

  • 3 pounds gold potatoes, cut into small cubes
  • 3 tablespoons minced garlic
  • 1/2 cup water
  • 2 tablespoons olive oil
  • 1/2 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1/2 cup vegan sour cream
  • 1/2 cup dairy-free milk plus more if needed
  • 1 tablespoon vegan butter plus more for topping (optional)

How to Prepare Slow Cooker Smashed Potatoes [Vegan, Gluten-Free, Nut-Free]

  1. Add potatoes, garlic, water, olive oil, salt, and pepper to slow cooker. Cover and heat on low for 7 hours (or on high for 3 hours) or until soft.
  2. Add remaining ingredients and smash the potatoes with a hand masher and stir everything together with wooden spoon, adding more milk if too thick.

Notes

Check on the potatoes regularly after a few hours so they don’t overcook, as slow cooker temperatures vary. You can peel the potatoes and mix with an electric mixer for smoother potatoes.
