A healthy, protein-packed replacement for the classic sloppy Joe. This spicy and nutrient-dense filling will wow even the pickiest eater.

Ingredients You Need for Slow Cooker Jalapeño Lentil Sloppy Joes [Vegan, Gluten-Free]

  • 2 tablespoons of olive oil
  • 1 medium yellow onion
  • 1 green bell pepper
  • 1 small jalapeño (seeded or not depending on your spice preference)
  • 2 cloves of garlic (minced)
  • 2 cups of lentils (your choice)
  • 3 cups vegetable broth
  • 4 cups of roasted tomatoes
  • 1, 6-ounce can of tomato paste
  • 2 tablespoon liquid aminos
  • 1 teaspoon salt
  • 2 tablespoons of liquid smoke
  • 2 tablespoons apple cider vinegar
  • 1 tablespoon maple syrup
  • 1 tablespoon ground cumin
  • 2 teaspoons of smoked paprika
  • 2 teaspoons dried oregano

How to Prepare Slow Cooker Jalapeño Lentil Sloppy Joes [Vegan, Gluten-Free]

  1. Turn your slow cooker on the sauté option and allow to heat.
  2. Add your olive oil.
  3. Once hot- add onions and green pepper.  Sauté for 4 minutes or so.
  4. Add garlic and jalapeño and stir for an additional 1 minute.
  5. Turn your machine to off.
  6. Add the remaining ingredients to your slow cooker.
  7. Stir to combine.
  8. Place the lid on, locking the top.
  9. Vent to the closed position.
  10. Turn on and set for 16 minutes.
  11. Taste test and adjust seasonings as needed.
  12. Serve on gluten-free rolls or pasta (or however you prefer).
  13. Freezes nicely in an airtight container for up to 30 days.
  14. Refrigerate for up to one week.
