This raw, salted macadamia ganache is the perfect fix for late night chocolate cravings. The rich chocolate ganache lays on top of a healthy macadamia nut, date, and ground almond crust.This recipe is pretty easy too, so you’ll have plenty of time to lick the spoons.

Ingredients

For the Crust:

  • 8 dates, pitted
  • 1 cup raw macadamia nuts
  • 1 cup almond meal
  • 1 teaspoon vanilla
  • 1/4 teaspoon sea salt

For the Ganache:

  • 1 cup macadamia nuts, soaked overnight
  • 3/4 cup raw cacao powder
  • 1/2 Fuji apple, peeled, seeded, and chopped
  • 1/2 cup coconut oil, melted
  • 1/2 cup agave
  • 1 tablespoon lecithin
  • 3/4 teaspoon sea salt
  • Water, as needed (around 1/4 cup)
  • 1 teaspoon sea salt
  • 1 teaspoon vanilla

Preparation

To Make the Crust:

  1. Pulse the nuts and dates together in a food processor. Mix with the almond meal, salt, and vanilla.
  2. Press into a pan lined in plastic wrap and press down firmly.
  3. Refrigerate until ready to use.

To Make the Ganache:

  1. Blend everything in a high-powered blender. Add water only as needed to blend easily.
  2. Pour into prepared crust. Garnish the top with crushed macadamias.
  3. Refrigerate or freeze overnight.
