Ingredients
For the Crust:
- 8 dates, pitted
- 1 cup raw macadamia nuts
- 1 cup almond meal
- 1 teaspoon vanilla
- 1/4 teaspoon sea salt
For the Ganache:
- 1 cup macadamia nuts, soaked overnight
- 3/4 cup raw cacao powder
- 1/2 Fuji apple, peeled, seeded, and chopped
- 1/2 cup coconut oil, melted
- 1/2 cup agave
- 1 tablespoon lecithin
- 3/4 teaspoon sea salt
- Water, as needed (around 1/4 cup)
- 1 teaspoon sea salt
- 1 teaspoon vanilla
Preparation
To Make the Crust:
- Pulse the nuts and dates together in a food processor. Mix with the almond meal, salt, and vanilla.
- Press into a pan lined in plastic wrap and press down firmly.
- Refrigerate until ready to use.
To Make the Ganache:
- Blend everything in a high-powered blender. Add water only as needed to blend easily.
- Pour into prepared crust. Garnish the top with crushed macadamias.
- Refrigerate or freeze overnight.
