If you're craving fries but don't want to ingest a boatload of salt and grease, this it the recipe for you! Rutabaga is a sweeter seasonal alternative to the ubiquitous potato, and they taste oh-so-delicious when dipped into (homemade!) vegan basil mayonnaise.
Rutabaga Fries With Basil Mayo [Vegan]
Ingredients
Rutabaga Fries:
- 1 rutabaga
- 1/2 tablespoon dry oregano
- 1 tablespoon oil
- Salt and pepper to taste
- Scant 1/2 cup soy milk
- 1 tablespoon lemon juice
- 1 garlic clove
- 1/2 teaspoon ground mustard seeds
- 1 handful basil
- Scant 1/2 cup olive oil
- Salt and pepper to taste
Preparation
To Make the Fries:
- Peel the rutabaga and slice it into even sized strips.
- Place the slices on a baking tray with parchment paper and season with spices and oil.
- Bake for 15-20 minutes at 400°F and stir them halfway.
- Blend soy milk, lemon juice, garlic, basil, and mustard seeds with a hand mixer.
- Slowly pour in olive oil and season to taste with salt and pepper.
- Leave in the fridge to thicken.
