If you're craving fries but don't want to ingest a boatload of salt and grease, this it the recipe for you! Rutabaga is a sweeter seasonal alternative to the ubiquitous potato, and they taste oh-so-delicious when dipped into (homemade!) vegan basil mayonnaise.

Rutabaga Fries With Basil Mayo [Vegan]

Rutabaga Fries:
  • 1 rutabaga
  • 1/2 tablespoon dry oregano
  • 1 tablespoon oil
  • Salt and pepper to taste
Basil Mayo:
  • Scant 1/2 cup soy milk
  • 1 tablespoon lemon juice
  • 1 garlic clove
  • 1/2 teaspoon ground mustard seeds
  • 1 handful basil
  • Scant 1/2 cup olive oil
  • Salt and pepper to taste


To Make the Fries:
  1. Peel the rutabaga and slice it into even sized strips.
  2. Place the slices on a baking tray with parchment paper and season with spices and oil.
  3. Bake for 15-20 minutes at 400°F and stir them halfway.
To Make the Mayo:
  1. Blend soy milk, lemon juice, garlic, basil, and mustard seeds with a hand mixer.
  2. Slowly pour in olive oil and season to taste with salt and pepper.
  3. Leave in the fridge to thicken.
