Refried Beanballs With Pasta and Spinach [Vegan]

On a budget? This quick and easy recipe is packed with flavor, but it won't break the bank. Pasta is tossed with tomato sauce, spinach, and crispy beanballs seasoned with Italian flavor. Yum!

Ingredients You Need for Refried Beanballs With Pasta and Spinach [Vegan]

  • 1 serving of refried beans (about 3.5 ounces)
  • 1/4-1/2 cup Italian bread crumbs
  • Oil, as needed
  •  2 ounces angel hair pasta
  • Pasta sauce, as desired
  • 2.8 ounces frozen chopped spinach
  • Fresh herbs, for garnish

How to Prepare Refried Beanballs With Pasta and Spinach [Vegan]

  1. Mash refried beans with most of the bread crumbs. Keep adding more until the mixture is dry enough roll into bean balls. More bread crumbs will make sure it’s less gummy but too much can completely dry them out. Roll them into balls then coat them by rolling the balls into bread crumbs.
  2. Put 1/2 tablespoon oil in a skillet and brown the beanballs on each side at medium/low heat. Add your favorite herbs and spices.
  3. Put pasta sauce and spinach in a bowl. Microwave for 2-3 minutes.
  4. Cook pasta then add spinach sauce. Top with beanballs.
